Happy Cinco de Mayo

What's not to love about a holiday that gives you the perfect excuse to make yummy Mexican food like tamales, enchiladas, guacamole, and salsa?
A friend taught me how to make tamales from scratch. My mouth waters just thinking about them. Now that I've mastered (sort of) the art of sushi and tamale making I need to figure out another ethnic dish to master. Any suggestions?

  4. Any holiday that commemorates the
    French being beaten
is fine with me! Have you tried empanadas? I'm sure the boys would love them!
