I was wrong. I didn't realize there would be no chocolate chip cookie either. I nearly panicked as my mind raced through meal after meal, dessert after endless dessert that would no longer pass through my lips. No more chocolate!
Picture this: We had several guests over for dinner on Sunday. I sat at the table holding a fussing Fuss Pot in my arms as I picked at my plate of green beans. Meanwhile, everyone else devoured the huge dish of cheesy manicotti I had slaved over, followed up with lemon-raspberry cake for dessert. If Landon ever wonders how much I love him I will only have to remind him of this event (and an eternal summer spent pregnant) to prove just how strong that love is.
But I digress.
Fall is in the air, the temperature has cooled (a little) and it is time to eat things like apple crisp, caramel apples, pumpkin pie, etc. But I cannot.
So here is a first for me: I am posting a recipe on my blog. I give you Pumpkin Chocolate Chip Muffins. They are Di-Vine! Seriously. If you don't like pumpkin I promise you will love these, along with all the other pumpkin-haters who have devoured these in the past. So whip up a batch when you're all alone so you won't have to share. Do it for me. Please. And then leave a little comment about how I've changed your life forever.
Pumpkin Chocolate Chip Muffins
1 2/3 c. flour
1 c. sugar
1 T pumpkin pie spice
1 tsp. soda
1/4 tsp. baking powder
1/4 tsp. salt
2 eggs
1 c. pumpkin, plain
1/2 c. butter
Mix ingredients well, until batter is smooth, then blend in 1 cup chocolate chips. Pour into greased muffin tin and bake at 350 degrees for 20-25 minutes.

Melanie, when all this crazyiness with Landon being fussy and me trying to live by Crazy Man's standards passes I say we should have a huge gorging party and eat as much chocolate with milk we can.

I. KNOW. HOW. YOU. FEEL!!! I had to give up dairy AND chocolate with Quinn. That's exactly what I kept telling myself EVERY SINGLE TIME everyone around me was eating something yummy and delicious that I couldn't have, "he better realize what I'm doing for him when he gets older, he better appreciate my sacrafice, he better be the perfect child when this first year is over!!!" So, I will make a batch of your muffins, I will eat many of them (if not all of them), and I will enjoy them to the very last crumb just for you! :)
ReplyDeleteI am, like, REALLY sad for you. My stomach hurts that you have to give up that much pure food enjoyment. You can tell how much my life depends upon food. I love it far too much (chocolate especially). Best of luck. It better turn that sweet Landon into Sweetest Baby of the Year.

Oh, sweetie. I honestly feel your pain. I went through that last year with Bradley but I had to go off milk and eggs. Not fun. But I learned a bunch of secrets and tricks along the way. I told myself over and over, it's only temporary. How are move plans going? When will you be in Seattle?
ReplyDeleteNot fun! I definitely understand your pain from diabetes. I learned after a bit that if you look around and get creative there are still things you can eat. There are plenty of things made with soy, etc. And think of the weight you're losing! I'm definitely jealous of that;)

So sorry about the fusspot. Mine where all that way. I have done no dairy, no chocolate, no brocolli....you know how it is. In th end it wasn't me at all it was acid reflux. Jennah was cured with zantac and Liddy took prevacid. I also started nursing them on one side each meal to prevent a fore-milk hind-milk imbalance (it really does work look it up!) Good luck!

She got over it eventually and now I'm on full dairy. However, I do have a lot of fantastic recipes and tricks that got me through that year. Coconut Sorbet was one such trick. If you want them, I can send them your way. BTW, your boys look great and you look like you're having a blast! Emma
