Today is my mom's birthday so in the spirit of gifts, here's a recipe of hers I'd like to give to you. But first, let me tell you why I chose this recipe.
One of the things I love about my mom and have come to appreciate even more after her passing, is her ability to manage her time. Even with six kids there was never a pile of laundry waiting to be washed or folded, we never ate fast-food or cold cereal, and we were never late to church. You'd think she stayed up until the late hours of the night to accomplish so much every day but that was not the case. I think her secret was early to bed and early to rise. She was always in bed at ten and up at six. Even though she hated to cook, she knew the importance of gathering the family around the table to eat good food. She prided herself in collecting delicious yet simple recipes and knew we loved nothing more than walking in the door after a long day to the smell of something baking in the oven.
They say the way to a man's heart is through his stomach.
I say if you want your home to feel like heaven, start in the kitchen.
Here is Mom's go-to recipe (prepped on Saturday night) for Sunday mornings on the run. I can't guarantee it will get you to church on time but it worked for her!
Breakfast Pull-Apart Rolls
20-24 Rhodes Dinner Rolls, frozen
1/2 small box non-instant butterscotch pudding mix
1/2 cup chopped pecans (optional)
1/2 cup butter, melted
1/2 cup brown sugar
3/4 tsp. cinnamon
Sprinkle nuts on the bottom of a greased bundt pan. Put frozen rolls in pan. Sprinkle dry pudding mix over rolls. Combine sugar, cinnamon, and melted butter. Pour over rolls. Let stand overnight while it thaws and rises. Bake 30-35 minutes in a 350 degree oven. Let stand for a couple minutes before inverting on plate.
